Leek-egg burji


Leeks are very delicate and have the similar taste of onion but with a hint of sweetness. It should be thoroughly cleansed before cooking because there may be soil trapped in between the leaves. Leeks are very popular for soups, pies also, it can be used as an alternative for onion. Moreover, leeks contain a small amount of sodium,cholesterol and a rich source of dietary fiber.Therefore,it can be a good choice for people with cardiac diseases.



INGREDIENTS

  • Leeks            2 nos
  • Egg               3 nos
  • Green chilli    3 nos
  • Salt                as needed
  • Pepper           1tsp
  • Curry Leaves 
  • Oil

PREPARATION
  • Heat oil in a pan and add finely chopped leeks.
  • Let it cook for sometime till it starts to fade at the same time chillies and curry leaves can be added to this.
  • Next, add beaten eggs to this mixture and scramble it together for five minutes.
  • Can be serve with pepper powder..

Broccoli stir fry


Broccoli is green vegetable from cabbage family being a pack of nutrients it can be eaten raw, steamed and stir fried. We usually discard the central stem of broccoli while these are also edible...


INGREDIENTS

  • Broccoli  - 1 nos
  • Onion     - 2
  • Chilli powder-1tsp
  • Turmeric powder - half tsp
  • Curry leaves
  • Salt
  • Oil

PREPARATION


  • Fry onion in oil till it becomes soft, a pinch salt can be added in order to make onion more easily cooked.
  • Meanwhile, chilli powder and turmeric powder, curry leaves is added and stir it well.
  • Washed and sliced broccoli florets is added to this mixture stir well and leave it for 10 minutes under low flame.
  • Broccoli would get a dark green colour when its completely cooked so this can be right time to serve.

Apple chocolate shake

                             

Apples are full of antioxidants and fibre, this combination gives a huge list of health benefits as lowering cholesterol levels. So this drink can be ideal for everyone to maintain better health. Additionally, it can be made easily at home also would be a favourite drink for kids and adults.

INGREDIENTS
  • Apple - 1nos
  • Milk   - 1 cup
  • Chocolate Powder - 1 tsp
  • Sugar - If needed

PREPARATION
  • Peel the apple and cut into small cubes
  • Grind apple cubes,milk and chocolate powder in a juicer.
  • Serve chilled and can be garnished with cashews or almond flakes

Neyyappam

                                         Neyyappam


 ''Neyyappam is a well-known South Indian snack usually made during festival season. Being my favourite I tried it recently and my mother helped me with her incredible tips. Finally, it came out well, so everyone can try this sweet crispy dish.''

INGREDIENTS
  • Rice - 1 1/2 cup
  • Jaggery -3/4 cup
  • Maida/ All purpose flour - 2 tsp
  • Grated coconut - 1/2 cup
  • Sesame seeds - 2 tsp
  • Salt - 1/4 tsp
  • Coriander Powder - 1 Pinch
  • Oil / Ghee to fry
PREPARATION
  • I used idly rice and soaked it overnight, later grind it to thick batter.
  • Meanwhile, heat jaggery in a sauce pan adding half cup of water, stir until it becomes thick as honey.
  • Grated coconut,sesame seeds, salt,coriander powder and maida can be added to the batter.
  • Finally,jaggery is added slowly to this and stir it gently
  • Keep this batter in an oven or warm place for 6 hours and let it undergo fermentation.
  • A spoonful fermented batter can be added to the boiling oil or ghee and fry it slowly.
TIPS

You may wonder why coriander powder is used for this sweet dish, it helps in fermentation process and makes neyyappam more soft and delicious....

Ulli vada (Onion Fry)


INGREDIENTS

  • Onion - 3 nos
  • Gram flour -5 tsp
  • All purpose flour- 2 tsp
  • Chilly powder - Half tsp
  • Turmeric powder-1 Pinch
  • Green chillies - 4
  • Curry leaves to add more flavour
  • Salt to taste
  • Oil to fry
PREPARATION
  • Slice onion into thin pieces
  • Green chillies can be cut into small round pieces
  • Mix gramflour and all purpose flour in a bowl then add chilly powder and turmeric powder to it.Make a thick batter
  • Add sliced onion and chillies and crushed curry leaves to the batter and stir it well
  • Heat oil in a pan
  • Spread the mixture into the boiling oil
  • Fry until it becomes golden brown
